St. Patrick’s Day Rainbow Cookies Recipe

These Rainbow Cookies are the simple and fun way to celebrate St Patrick’s Day! They are a perfect cooking activity with your kids, they will love to create the brightly colored cookie dough and roll out the different layers. Hopefully these cookies will bring you plenty of good luck!

Ingredients:
- 3/4 Cup Unsalted Butter
- 1 ¼ Cups Powdered Sugar
- A Pinch of Salt
- 1 Teaspoon Vanilla Cloud Flavoring
- 3 Egg Yolks
- 2 ½ Cups Cake Flour
- Oil Based Food Color Red, Orange, Yellow, Green, Blue Bell and Purple



Instructions:
1. Gently beat the unsalted butter, add the powdered sugar and salt and whisk until lightly white.
2. Beat in the eggs, followed by the Vanilla Coud Flavoring.
3. Add the dry ingredients and mix until just combined.
4. Divide the dough into 6 portions
5. Place each portion of dough into individual bowls and tint the dough different colors.
6. Tear a piece of baking paper approx. 6 to 7 inches. You’ll use this to help roll your dough tightly together and as a guide for length.
7. First, roll the purple dough in a cylinder the length of the baking paper, set aside.
8. Next using a rolling pin, roll out the blue dough on the baking paper and then place the purple cylinder on top of the blue dough. Tightly wrap the dough around the purple so you have a larger cylinder with the purple dough inside the blue dough.
9. Continue to do this with each color of dough until you have one large cylinder with all the colors wrapped around each other.
10. Next, wrap the dough in plastic wrap and refrigerate for 45 minutes to one hour or until firm.
11. Once chilled, cut the dough into slices. Then cut each circle into half, place it in an oven pan.
12. Bake the cookies in the oven at 170-degree celcius for about 15 minutes and let cool.
13. Spray Gold Edible Glitter on the cookies to let them sparkle!
